Pumpkin Bars with Cream Cheese Frosting

 

Mix together in a large bowl

4 eggs

1 cup salad oil

2 cups sugar

1 15-oz can pumpkin

 

Combine and add to pumpkin mixture

2 cups flour

2 tsp baking powder

1 tsp soda

1/2 tsp salt

2 tsp cinnamon

1/2 tsp ginger

1/2 tsp cloves

1/2 nutmeg

 

Mix well and pour into greased and floured pan. I use a cookie sheet.

Bake at 350 for 25 to 30 minutes.

 

Cream Cheese Frosting

1-6 oz cream cheese

3/4 stick oleo

1 Tbs cream or milk

1 tsp vanilla

4 cups powder sugar

 

Beat first 4 ingredients until light. Add powdered sugar until correct

consistency to spread. Frost and cut into 2x3 inch bars.

Bars freeze well
