Pumpkin White Chocolate Chip Pecan Muffins

 

1 1/2 cup sugar

1/2 cup vegetable oil

4 eggs

1 -15 oz. can of pumpkin

1/2 cup water

3 cups all-purpose flour

1 1/2 teaspoon baking powder

 

 

1 teaspoon baking soda

1/2 teaspoon ground cloves

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/2 teaspoon ground nutmeg

1 cup White or semisweet chocolate

chips

3/4 c. Pecan, chopped and toasted in a dry frying pan or Microwave

 

. Preheat the oven to 400 degrees F (200 degrees C). Grease and flour

muffin pan or use paper liners.

Mix sugar, oil, eggs. Add pumpkin and water. In separate bowl mix

together the baking flour, baking soda, baking powder, spices and salt.. Add

wet mixture and stir in chocolate chips.

Fill muffin cups 2/3 full with batter. Bake in preheated oven for 20 to

25 minutes. Makes 2 1/2 dozen muffins

Mmmmm pumpkin anything is my favorite

this time of year. Great idea to use the white

chips in them. I will sure try these soon.

I hope you enjoy them. I think you could reduce the eggs to 3 instead of 4. I

adapted and made some changes to a different recipe. Try it with 3 and see

what you think.
