Guest guest Posted September 16, 2006 Report Share Posted September 16, 2006 Italian Vegetable Casserole 2 zucchini, sliced 1/2 " thick 2 yellow squash, sliced 1/2 " thick 2 onions, medium diced 2 Tbsp butter or margarine 1 Tbsp garlic cloves, chopped fine 1 tsp oregano 1 8-oz can tomato sauce 3 oz mozzarella cheese, grated Saute zucchini, yellow squash and onion with the butter and garlic Add oregano and tomato sauce Simmer 5-7 minutes Place in casserole dish and sprinkle cheese on top Bake 30 minutes at 350° Quote Link to comment Share on other sites More sharing options...
