Guest guest Posted September 15, 2006 Report Share Posted September 15, 2006 Low Fat -- Guacamole 1 large ripe avocado 2/3 cup low fat cottage cheese 1 green onion, finely chopped 2 cloves garlic, minced 2 TB fresh lemon or lime juice 1 tsp. minced jalapeño, OR 2 dashes Tabasco green pepper sauce, or to taste Salt and ground black pepper, to taste Slice avocado in half, lengthwise and remove the pit. Remove flesh from peel and place in a food processor with remaining ingredients. Puree until smooth. Makes about 1-1/2 cups. Note: Keep in mind that the flavors, especially the heat of the jalapeños, will intensify the longer the guacamole sits, so season accordingly. You can always add more later.
