Choctaw Pumpkin Cake

 

2 cups flour

1 tsp. salt

1-3/4 cups sugar

4 eggs

1 tsp. vanilla extract

1-1/2 cups vegetable oil

2 tsp. ground cinnamon

2 tsp. baking soda

1 TB cocoa

1 can (15-1/2 oz.) pumpkin puree

Cream Cheese Frosting, recipe follows

 

Preahet oven to 325º F.

 

Mix all ingredients together, except Cream Cheese Frosting.

 

Pour into a greased 9 " x 13 " baking pan.

 

Bake for 30 to 35 minutes, checking frequently. Let cool.

 

Top with Cream Cheese Frosting.

 

~~~Cream Cheese Frosting~~~

 

1 lb. softened Neufchatel cream cheese

4 TB butter, softened

1 box (1 lb.) confectioners sugar

2 tsp. vanilla extract

2 TB sour cream

 

Cream all ingredients until smooth.

 

Frost cake.
