[recipe*] Crockpot Goulash

This is a yummy stand-by recipe at

my house. So quick and easy to prepare

before leaving for work; then just come

home boil pasta, add veggie crumbles

and voila! Dinner is served. Now if I have time

before heading to work I like to saute the onions

a bit before adding them to the crockpot, but

you can skip that extra step and it is still wonderful.

Crockpot Goulash

 

1 sweet onion, chopped

1 bell pepper, chopped

1 stalk celery, chopped

1 tsp minced dried garlic

1 tsp oregano

1/2 tsp paprika

1 can (14 oz) diced Italian-style tomatoes, undrained

1 jar spaghetti sauce [used my own homemade, but

store-bought will work]

4 cups pasta [any style noodle you prefer]

1/2 package (12 oz) TVP crumbles

Romano cheese, grated (optional)

 

Place first 8 ingredients into the crockpot and

stir to combine. Set the crock on the low setting

and allow to cook for 6 hours.

Cook the pasta according to package directions; drain.

Add pasta to the crock pot and stir to combine.

Heat TVP crumbles in the microwave; I used a frozen

brand so I just defrosted and slightly heated through.

Combine this in the crockpot. Allow all to heat through

and then serve with Romano cheese if desired.

 

Yield: 6 servings
