Potato Tacos with Cheese and Jalapenos 8 soft corn tortillas 1 to 1 1/3 cups mashed potatoes 1/4 lb. cheddar cheese or Jack cheese cut into 16 matchsticks 1/2 stick butter, room temp. 16 pickled jalapeno slices salsa of your choice (jar or homemade) Soften tortillas in microwave or on a low burner on the stove flipping them over a few times. Spoon 1 1/2 Tbls. mashed potatoes into center of each tortilla, flatten out the potato leaving 1-inch border. Lay 2 cheese matchsticks and 2 jalapeno slices on each tortilla and fold into half-moon shape. In a large skillet over med. heat melt 1/2 the butter. Set 4 of the tacos in the pan and cook until browned, about 3-4 minutes on each side. Drain on paper towels. Repeat with the remaining butter and tacos. Carefully cut tacos in half before serving with salsa. Serves 4. Talk is cheap. Use Messenger to make PC-to-Phone calls. Great rates starting at 1¢/min. Originally from the ancient French " grimoire " , meaning a collection of magic spells. Most people were illiterate and so a literate person might has well have been a magician.
