Guest guest Posted September 11, 2006 Report Share Posted September 11, 2006 This is a favorite at our house. We make it often and it is so quick. Enjoy, Judy Italian Veggie Soup Heat 2 T. Olive Oil in a large Soup Pot Add: 1 lg Onion, finely chopped 2 cloves Garlic, minced 2 Celery Stalk, chopped 8 c. Water 8 T.. Bill Best " Chicknish Seasoning " or McKay's Chicken-Like Seasoning 1 Bay Leaf Dried Oregano and Salt to taste 2 - 16 oz Cans Great Northern Bean 2 - 16 oz. Cans Italian Tomatoes , chopped 16 oz bag of Spinach, frozen, chopped, ( I like use fresh to sometimes) Combine all of the ingredients except spinach and simmer for about 20 minutes or so. Add Spinach, stir in and remove from heat. Leave covered. Spinach will cook very quickly. 1 8oz. package of elbow noodles or small shell pasta. - Cook until tender and drain. Add about 1/2 c. of broth from the soup above and stir into the pasta. This will keep the noodles from sticking together. Do NOT add the pasta into the pot of soup. In each soup bowl add a few noodles, ladle in soup and sprinkle with fresh grated Parmesan Cheese. Quote Link to comment Share on other sites More sharing options...

We just love it and it is a great one dish meal full of nutrition. Enjoy, Judy Judy it's soup weather right around the corner. This sounds special and I will cook it up soon.
