Guest guest
Since we just turned 4 years old as a group, here is a wonderful carrot cake recipe that I just love. Carrot Cake 2 cup flour 2 cups sugar 1/2 tsp salt 1 tsp baking soda 2 tsp ground cinnamon 3 eggs 1 1/2 cups oil 2 cups finely grated carrots 1 tsp vanilla extract 1 cup well drained crushed pineapple 1 cup flaked coconut 1 cup chopped nuts, divided Frosting: 2 packages (3oz each) cream cheese, softened 3 cups confectioners' sugar 6 Tbs butter or margarine, softened 1 tsp vanilla extract In a mixing bowl, combine the dry ingredients. Add eggs, oil, applesauce, carrots and vanilla; beat until combined. Stir in coconut and 1/2 cup nuts. Pour into greased 13x9x2 inch baking pan. Bake at 350 for 50-60 minutes or until cake tests done. Cool. Combine frosting ingredients in a small bowl; mix until well blended. Frost cooled cake. Sprinkle top with remaining nuts. Store in refrigerator. Yield: 12- 16 servings ~ PT ~ It is good to have an end to journey towards, But it is the journey that matters, in the end. ~ Ursula Le Guin
Guest guest
Hi, I was about to make this and then I noticed something: " ..Add eggs, oil, applesauce, " and I looked in the ingredients and asked myself, What Applesauce? How much? Or is that applesauce in the instructions supposed to be crushed pineapple since I don't see it mentioned in the directions? Help?
