Guest guest
The evenings are turning cooler and the change in the weather towards Autumn reminds me that soon I will be baking some favorites again! Here is a sweet bread recipe that I love and it is a real treat... more like a dessert. Chocolate Chip Pumpkin Bread 1/2 cup butter or margarine, softened 1 cup + 2 Tbs. sugar 2 eggs 1 cup prepared mashed pumpkin 1/4 cup soy milk [or whatever milk] 1 tsp vanilla extract 1 1/2 cups all-purpose flour 1/2 cup whole wheat flour 1/4 cup baking cocoa 1 tsp. ground cinnamon 1 tsp baking soda 1 tsp salt 1 cup chocolate chips In a mixing bowl cream the butter with the sugar. Add the pumpkin, eggs, soy milk, and vanilla; blend well. In another bowl, sift together the flours with the cocoa, baking soda and salt. Combine with the pumpkin mixture until well blended and smooth, then fold in the chocolate chips. Transfer to a greased 9x5x3 inch loaf pan and bake at 350 degrees for 60 to 65 minutes, or until a toothpick inserted in center comes out clean. Cool for 10 minutes before removing from the pan to cool on a wire rack. Yield: 1 loaf ~ PT ~ Month of September - benign are the planets; Tending to please, the sea and the hamlet; Common it is for steeds and men to be fatigued. ~ anon.
