I found this recipe back in 2002 in a Quick Cooking magazine, but had to try converting it into a veg-friendly version to see if veggie bacon strips would work, and they do! This makes a great casserole that even an omnivore would love to eat for brunch. Amish Breakfast Casserole 1 package (5 oz depending upon brand) vegetarian bacon strips* Non-stick cooking spray 1 meduim sweet onion, chopped 6 eggs, lightly beaten 4 cup shredded hash brown potatoes, thawed 2 cups shredded cheddar cheese 1 1/2 cups (12 oz) small curd cottage cheese 1 1/4 cups shredded Swiss cheese In a large skillet that has been sprayed with non-stick cooking spray, cook bacon and onion until bacon is crisp. In a bowl, combine the remaining ingredients; stir in bacon mixture. Transfer to a greased 13x9x2 inch baking dish. Bake uncovered at 350 degrees for 35 to 40 minutes or until set and bubbly. Let stand for 10 minutes before cutting. Yield: 12 servings. *I used Gimme Lean Smart Bacon brand (vegetarian) but MSF bacon strips can be used also. ~ PT ~ A brave heart and a courteous tongue.
