Guest guest Posted September 1, 2006 Report Share Posted September 1, 2006 Italian Green Bean Salad 1 lb. fresh green beans, trimmed 1/2 cup carrots, julienned 1 cup red or green bell pepper, julienned 1/2 cup red onion, thinly sliced 1/4 cup nonfat Italian salad dressing 1/2 tsp. ground black pepper 1. Bring a medium sauce pan of water to a boil over high heat. Add green beans to pan and cook for 4 minutes. Add carrots to pan; cook until vegetables are crisp tender, about 1 minute. 2. Drain green beans and carrots in a colander. Rinse under cold running water until cool. Using paper towels, pat dry. 3. In a serving bowl, combine bell pepper, onion, salad dressing, and black pepper. Mix well. Add green beans and carrots; toss gently to combine vegetables with dressing. Serves: 4.
