I usually always cook a big pot of brown rice so there is plenty

leftover, and then I look for complimentary dishes to add to it.

Here is one of my favs!

BEANS RICE AND GRAVY

Take plenty of chopped onions and cook them in a small amount of

water until they are almost soft.

While you are waiting for them to cook open up three cans of organic

beans and rinse them -- garbanzos, kidney, and blackbeans.

Also take a package of }{ain vegetarian brown gravy and disolve it

according to directions: (in a cup combine brown gravy mix and water)

Set this aside

(Back to the pan): Next add oil and beans to the simmering onions and

let the mixture warm up using a slightly lowered temp

Add cooked brown rice until you get a stew consistency.

Then, While the temperature of the mix is getting hot again take your

brown gravy and pour it right over the beans and onions.

Finally heat and mix until the gravy thickens

mmmm just had some! :)

That is a great idea! Thanks cuppa. I am looking for

quick, easy ideas for meals I can pack in a soup

thermos to take to my new job I start this Wednesday.

Bet this makes quite a lot of food too. :)
