Guest guest Posted August 30, 2006 Report Share Posted August 30, 2006 Corn Salsa Low salt, low fat. 2 cups corn kernels 1/4 cup ripe avocado, diced 1/2 cup red onion, minced 1/2 cup canned kidney beans, rinsed and drained, optional 2 TB fresh tomatoes, minced 2 TB jalapeño pepper, minced 2 TB lime juice 2 tsp. sugar 2 TB red wine vinegar Combine all ingredients and chill for several hours before serving.
