Ideas for jalapenos

Does anyone have ideas for what to do with large numbers of jalapeno

peppers? I've made more salsa than I think we can eat in a year. Also,

I'm allergic to dairy (not intolerant - allergic) so poppers with

cheese products is out. Thanks in advance for all who reply.

How about poppers using non dairy cheese, also burritos, enchilada's, or

freeze them to use later.

Cut off the top of the jalapeno, cut it in half, scrape out the insides, wrap it

in Morningstar Farms imitation bacon (hopefully that doesn't have dairy products

in it!), and bake it at 350 till the " bacon " is crispy. I put cream cheese

inside them, but of course it's not necessary. Is there some kind of nondairy

cream cheese? Oh well, I made them once without the cream cheese because I was

out, and they were very good!

Toffuti makes a great vegan cream cheese.

Dear Bobbi,

 

You can pickle them in brine(aka salt and water) or sweet wine vinegar.

You pickle them together with, say onions (or even olives).

The more colours you can get inside the jar, the merrier.
