Guest guest Posted August 23, 2006 Report Share Posted August 23, 2006 Speedy Salsa 1 can (14-1/2 oz.) whole tomatoes, drained 1/4 cup chopped red onion 1/4 cup chopped sweet onion 1 jalapeño pepper, seeded* 1 TB cider vinegar 1 TB minced fresh cilantro 1 garlic clove, peeled 1 tsp. ground cumin 1/4 tsp. salt In a food processor, combine all ingredients; cover and process until chunky. Transfer to a small bowl. Serve immediately. Yield: 1-1/3 cups. *Note: When cutting or seeding hot peppers, use rubber or plastic gloves to protect your hands. Avoid touching your face. Nutrition Information: Per serving = 1/3 cup equals 34 calories, trace fat (trace sat fat), 0 cholesterol, 336 mg sodium, 7 g carbs, 2 g fiber, 1 g protein. Diabetic Exchange: 1 vegetable.
