Guest guest Posted August 23, 2006 Report Share Posted August 23, 2006 Hi Mary, What you feed your family depends on what type of vegetarian you are or want to be...egg, cheese, dairy (ovo- lacto)...or strictly no dairy products (vegan). The only 'cheap' things I know are vegetables from the local farmer's market (depending on your location) or your own garden if you have one, different beans either canned or cooked from dry beans at home, white or brown rice, and different macaronis or noodles. You can make stir frys in a regular skillet with many vegetables and ladle them on top of some rice or noodles for a quick dinner. If you eat cheese of course, macaroni and cheese is a possiblility with a side salad or some other veggies. You can make a meatless chili from kidbey or chili beans, tomato sauce or canned tomatoes, onions, and chili powder. Much depends on your budget and where you shop (lots of stores have low cost labels). Use shopping flyers that come with your paper or home delivered to plan meals. When things are on sale, buy what you think you will use within a month (or whenever you shop). With gas prices these days and locations of bargain stores, one must consider that, too, in the budget. Oh, and right on about having to keep gas prices and trips to the store in mind when we do our family budgeting. Having a fully stocked pantry saves those mad-dash trips to the store and saves on the gas used. Mary, I have a helpful pantry list in our files if you'd like to printit out to use as a basic guide for what to keep onhand.
