Guest guest Posted August 22, 2006 Report Share Posted August 22, 2006 Impossible Spinach Parmesan Pie Greek inspired recipe. 1 TB butter or stick margarine 4 medium green onions, thinly sliced 2 garlic cloves, finely chopped 1 pkg. (10 oz.) frozen chopped spinach, thawed, drained and squeezed dry 1/2 cup small curd creamed cottage cheese 1/2 cup Original Bisquick® mix 1 cup milk 1 tsp. lemon juice 1/4 tsp. ground black pepper 3 eggs 3 TB grated Parmesan cheese 1/4 tsp. ground nutmeg Parmesan cheese, shredded, for garnish Heat oven to 350º F. Grease or butter a 9 inch pie plate. Melt butter in 10 inch skillet over medium heat. Sauté onions and garlic in butter 2 to 3 minutes or until onions are tender. Stir in spinach; spread this mixture in the pie plate. Spread with cottage cheese on top of spinach mixture. Stir or whisk Bisquick mix, milk, lemon juice, pepper and eggs until blended. Pour into pie plate; sprinkle with Parmesan cheese and nutmeg. Bake about 35 minutes or until knife inserted in center comes out clean. Cool 5 minutes.
