Western Family Omelet

This has always been a Sunday favorite when I

was a kid.

Western Family Omelet

 

12 large eggs

1/4 teaspoon black pepper salt

1 med. onion

1 green bell pepper

1 pinch red crushed peppers

1 pkg mushrooms -- (8 oz)

Heavy cream optional

4 large tomatoes salad oil parsley sprigs for

garnish with 1 1/2 cups grated cheddar cheese

 

In a bowl,with a wire whisk or fork,beat eggs,black pepper,2/3 cup water or

cream

and 1 tsp. salt until blended.Dice onion,and green bell pepper.Cut

each mushroom in half.Cut tomatoes into wedges. In a 12 " skillet over

medium high heat,in 2 tbsp.butter, cook onion,pepper flakes,green bell pepper

and

1/2 tsp. salt until tender.Remove to small

bowl;keep warm.In same skillet, heat 2 tbsp. butter,cook mushrooms until

golden.Remove to another bowl;keep warm. In the same skillet over medium

heat, heat 2 tbsp. butter. Pour egg mixture into skillet;cook until set

around edges.With metal spatula,gently,lift edge as it sets,tilting to

allow uncooked portion to run under the omelet.Shake skillet,

occasionally,to keep omelet moving freely in the pan.When omelet is set

but still moist,pour mixture over half the omelet. Tilt skillet and,with

spatula,fold omelet in half;slide onto heated platter.Top with

mushrooms.Garnish platter with parsley sprigs and tomato wedges and cheese.

Hi GeGee, great to see you here and sharing your

recipes, too. My Grams used to make these things

she called Westerns, but she used hamburger in

them. Ew! *lol* I like your Western recipe much better!
