Guest guest Posted August 16, 2006 Report Share Posted August 16, 2006 Homemade Dip for Veggies and Crackers 1/2 cup nonfat ricotta cheese 1/2 cup low fat cottage cheese 1 clove garlic, crushed 1/4 cup chopped fresh basil 1/4 cup chopped fresh parsley 2 TB chopped fresh chives OR 2 TB chopped green onion tops 1 TB chopped fresh marjoram or 1 tsp. dried 2 tsp. chopped fresh oregano or 3/4 tsp. dried 1 tsp. fresh lemon juice `/8 teaspoon black pepper ~~~Garnish~~~ Fresh chives and oregano sprigs In a blender or food processor fitted with the metal blade, combine ricotta, cottage cheese, and garlic. Add the basil, parsley, chopped chives, marjoram, oregano, lemon juice, and pepper. Process until smooth, about 30 seconds, stopping machine to scrape down sides of bowl with a rubber spatula. Place cheese spread in a small serving bowl. Cover bowl with plastic wrap and refrigerate for 1 hour to allow flavors to blend. Garnish with chives and oregano sprigs.
