Guest guest Posted August 16, 2006 Report Share Posted August 16, 2006 marinade: 1/4 cup raspberry basalmic vinegar 1/8 cup lemon juice 2 Tbsp olive oil 1/8 C dijon mustard Half cube extra firm tofu, cubed 1/2 red onion, chopped 1/2 small head red cabbage, shredded 1/2 cup celery, chopped (yuck, i hate celery!) 1/2 c raisins (optional) small amount of oil for frying marinade the tofu cubes overnight. Remove tofu cubes, reserve marinade. Lightly pan fry tofu to desired crispiness Remove tofu from heat, place in bowl Add cabbage, onion, celery and raisins pour remaining marinade over and mix well Serve over lettuce, in a lettuce wrap, in a tortilla or on bread Quote Link to comment Share on other sites More sharing options...
