Couscous Salad

1 box flavored couscous (garlic or Parmesan), cooked or *use

directions below

1 can chick peas

1 red bell pepper, finely chopped

1/2 Vidalia onion, chopped

1 English cucumber, peeled, seeded, and finely chopped

1 tomato, chopped

1/4 cup fresh parsley leaves, chopped

1/2 cup crumbled feta cheese

Salt

1/4 cup olive oil

2 to 3 limes, juiced

 

In a large bowl, toss all the ingredients with the olive oil and lime

juice, to taste.

 

*Directions for preparing plain Couscous and then season with a little

minced garlic or parmasean cheese

1 cup uncooked Couscous

1 1/4 cups water

1/4 teaspoon salt (optional)

1 teaspoon butter or Smart Balance Light (optional)

 

In saucepan bring water, salt and butter to a boil. Add

Couscous, stir quickly. Remove from heat and cover. Let stand for 4-5

minutes. Fluff with a fork before serving.
