Guest guest Posted August 16, 2006 Report Share Posted August 16, 2006 Pasta with Chicken, Tomato, and Feta Serves 4; Prep time: 15 minutes; Total time: 15 minutes Keep your cool this summer by turning off the oven-without sacrificing delicious meals. Coarse salt and ground pepper 12 ounces ditalini or other small tubular pasta 2 tablespoons olive oil 3 tablespoons fresh lemon juice 1 cup (4 ounces) crumbled feta cheese 1 pound plum tomatoes, cut into 1/4-inch chunks (3 cups) 1 12.5 oz can Worthington Fri-Chik ( http://www.kelloggs.com/cgi-bin/brandpages/product.pl?product=374 & company=41 ) , chopped and drained , freeze the broth in a zip lock bag for use in a future soup recipe 1 cup torn fresh basil leaves 1. In a large pot of boiling salted water, cook pasta until al dente, according to package directions. Drain; rinse well under cold water. 2. Transfer to a large bowl; toss with oil, lemon juice, feta, tomatoes, Fri-Chik, and basil; season generously with salt and pepper. Serve at room temperature or chilled. That is so helpful since some of us have never seen these for sale in stores in our areas of the country. I do want to get some soon to try, so next time I place an order with the Mail Order Catalog for Healthy Eating I am going to add this to my list.
