Just thought I'd repost the recipe. We have a couple of wonderful mix-gift ideas in our files, so check them out next time you need a gift for a housewarming or a friend with a new baby; no need to rush to the store, just raid your pantry! Oatmeal Raisin Cookie Mix 1 cup all-purpose flour 1 tsp baking soda 1 tsp ground cinnamon 1/2 tsp nutmeg 1/2 tsp salt 3/4 cup packed brown sugar 1/2 cup sugar 3/4 cup raisins (or chocolate chips if you prefer) 2 cups quick-cooking oats ADDITIONAL INGREDIENTS: 3/4 cup butter or margarine, softened 1 egg 1 tsp vanilla extract In a bowl, combine the first five ingredients; set aside. In a 1-qt glass jar, layer brown sugar, sugar, raisins or choc chips and oats, packing well between layers. Top with reserved flour mixture.Cover and store in a cool dry place for up to six months. Yield: 1 batch cookies (about 4 cups total) To Prepare Cookies: In a mixing bowl, cream the butter. Beat in egg and vanilla. Add cookie mix and mix well. Drop by rounded teaspoonsful 2 inches apart onto greased baking sheets. Bake at 350 degrees for 9 to 11 minutes. Cool for 2 minutes before removing from baking sheets. Yield: about 5 dozen cookies per batch Tie a jar of this cookie mix with a pretty ribbon and include a recipe card.
