Guest guest Posted August 13, 2006 Report Share Posted August 13, 2006 Moroccan Pilaf 2 tsp. stick margarine 1 cup yellow onion, chopped 1 clove garlic, minced 2-1/2 cups water 1 cup white rice 1/2 cup orzo 1/4 cup toasted slivered almonds 1/4 cup golden raisins 1/2 tsp. salt 1/2 tsp. grated fresh ginger 1/2 tsp. ground cumin 1, In a medium sauce pan, melt margarine over medium heat. Add onion and garlic; saute until tender, about 5 minutes. Add water and bring mixture to a boil. 2. Stir in rice, orzo, almonds, raisins, salt, ginger, and cumin. Reduce heat to low; simmer, covered, until liquid is almost absorbed, about 30 minutes. 3. Place pilaf on a serving plate. Fluff pilaf lightly with a fork. Serve immediately. Yield: 4 servings.
