Broiled Vegetable Burgers  

 

2 cup shredded carrot

1 cup cooked brown rice

1/2 cup chopped onion

1/2 cup chopped almonds

1/2 cup fine dry bread crumbs

1 TB fresh parsley, chopped

1/2 tsp. ground ginger

1/4 tsp. ground black pepper

1/2 tsp. ground coriander

4 egg whites

2 TB soy sauce

Nonstick spray coating

 

In a large bowl, stir together carrots, rice, onion, almonds, bread crumbs,

parsley, ginger,

coriander, and 1/4 teaspoon pepper.

 

Stir together eggs and soy sauce; add to rice mixture and mix well. Cover and

chill.

 

Shape rice mixture into 6 patties. Spray a baking sheet with nonstick spray

coating.

 

Place patties on baking sheet. Broil 3 to 4 inches from heat for 3 to 5

minutes on each side.

 

Makes: 6 servings.
