Spicy Potato Cubes

 

5 large Potatoes, cut into large cubes, leave on skins

 

Rinse the potatoes well, after cutting to remove excess starch. Put into a

Microwavable bowl and add about 1/3 c. water. Cover with a dinner plate

(microwaveable) and cook about 8 minutes until tender.

 

Drain the potatoes, add to 2 inches of hot oil in a wok. Cook on high.

They will be done in less than 4 minutes. Stir frequently. Remove with a

slotted flipper, when browned.

 

Prepare a baking sheet with 2 layers of paper towels. Dip out the potatoes

onto the paper towel lined baking sheet. Sprinkle with Tony Chachere's

Creole Seasoning and a little salt. Toss well ....

 

*** The potatoes don't absorb as much oil, by being precooked and they have

a much lighter taste to them***
