Guest guest Posted August 10, 2006 Report Share Posted August 10, 2006 Italian Caprese Salad 1 lb. ripe tomatoes, cut into quarters OR 1 lb. cherry tomatoes, cut in half 6 oz. mozzarella cheese, cut into small cubes 3 TB extra virgin olive oil 3 TB lemon juice 12 medium fresh basil leaves, shredded 1 clove garlic, minced 1/8 tsp. salt, optional 1/8 tsp. ground black pepper Combine all ingredients in a bowl and toss.
