Guest guest Posted August 9, 2006 Report Share Posted August 9, 2006 I made this for my parents last weekend. Nice for a Sunday breakfast or brunch. Was very frestive to look at. It served 5 of us. I was thinking if adding some red and green bell peppers next time. Green Chili Omelet Breakfast 1 sm. can green chili peppers 1 (8 oz.) pkg. cream cheese 1 dozen eggs salt butter or margarine 1 cup milk 1/2 cup finely chopped tomatoes chopped green onions and tops included salsa on the side You will also need two skillets of equal size, 8 to 12 inch diameter. In blender mix eggs, milk, and a little salt until frothy. Melt butter in skillets. Cook half of the egg mix in each skillet on medium to low temperature covered. Check every few minutes for doneness by pressing the center of eggs or lifting edge to make sure bottom isn't burning. If it is browning to quickly, lower heat. When omelets are cooked place one on a platter. Soften cream cheese and spread all but 2 tablespoon on omelet. Sprinkle 3/4 of the green chilies on top of the cream cheese. Place the other omelet on top of first omelet. Place remaining cream cheese in the very center of the omelet top. Sprinkle the remaining chilies on top of the omelet. Now sprinkle the chopped tomatoes and green onions over the whole top of the omelets. Serve with some fresh salsa on the side. I think your idea for next time of adding the red and green bell peppers is a good one; chopped black olives would be yummy, too. Thanks for sharing this here.
