Rhubarb Bread

 

1 1/2 cups firmly packed brown sugar

2/3 cup vegetable oil

1 large egg beaten

1 cup buttermilk or sour milk

1 tsp. baking soda

1 tsp. salt

1 tsp. vanilla

2 1/2 cups flour

dash cardamom (optional)

1 1/2 cups chopped fresh rhubarb

1/2 cup chopped walnuts or pecans

1/3 cup white sugar

1 tbl. melted butter

 

Heat oven to 325 degrees, oil and flour two 8-inch loaf pans.

Combine brown sugar, oil and egg, blend well.

Combine buttermilk, baking soda, cardamom, salt and vanilla. Blend well.

Add the milk mixture to the sugar mixture alternately with the flour,

beating well after each addition. Fold in the rhubarb and nuts.

Turn batter into the loaf pans.

Sprinkle top with the melted butter and then white sugar.

Bake 45 minutes or until inserted toothpick comes out clean.

Remove from oven, sit on wire rack for 5-10 minutes.

Remove bread from pans to wire rack to finish cooling.

Thanks for this. I love rhubarb anything!

 

Some of my favorite rhubarb recipes are:

 

Strawberry Rhubarb Compote

Almond Rhubarb Coffee Cake

Rhubarb Snack Cake

and Rhubarb Slush

 

And these, that I don't have recipes for, but

my dear Grams made:

 

Strawberry-Rhubarb Pie

and Rhubarb Custard Pie

 

Grams just had a way of making both of those pies come

out perfectly every time and she never used a recipe!

I should hound my aunt to see if she remembers how

Grams did those. :)
