Guest guest Posted August 1, 2006 Report Share Posted August 1, 2006 Crunchy Veggie Sandwiches ~~~Vegetable Mixture~~~ Combine in a bowl: 1 cup green bell pepper, chopped 1 cup cucumber, seeded and chopped 1 cup celery, chopped 1 cup tomato, seeded and chopped 2 TB onion, chopped 2 TB fresh parsley, chopped 2 TB dill pickles, chopped ~~~Dressing~~~ Whisk together in a small bowl: 1/3 cup fat-free sour cream 1/4 cup reduced-fat mayonnaise 1/4 teaspoon salt Stir into Vegetable Mixture. Cover and refrigerate for 1 to 2 hours. Serve on lettuce lined rolls. To Serve: Lettuce leaves 6 sandwich rolls, split Serves 6. Nutrition Information: Per serving (1/2 cup) = 162 calories, 3 g fat (1 g saturated fat), 1 mg cholesterol, 519 mg sodium, 0 carbohydrate, 0 fiber, 5 g protein. Diabetic Exchanges: 2 starch.
