Guest guest Posted July 26, 2006 Report Share Posted July 26, 2006 Corn, Tomato and Sweet Onion Salad 1 can (14.5 oz.) whole kernel corn, drained 1 can (14.5 oz.) Petite Diced Tomatoes with Sweet Onion, drained 3 green onions, thinly sliced 1/3 cup fresh cilantro, chopped 2 limes, juiced 1/3 cup rice vinegar Kosher salt, to taste In a large bowl combine corn, Diced Tomatoes with Sweet Onion, green onion and cilantro. Pour lime juice over mixture and mix well. Stir in vinegar and sprinkle with kosher salt. Cover and chill for 45 minutes to 1 hour. Stir before serving. Serves: 6. Nutrition Information: Per serving = Calories 50, Fat 0 g, Cholesterol 0 mg, Sodium 590 mg, Carbs 12 g, Fiber 2 g, Protein 1 g, Vitamin A 10%, Vitamin C 25%, Calcium 4%, Iron 4%.
