Guest guest Posted July 24, 2006 Report Share Posted July 24, 2006 Tomato, Zucchini and Rice Soup 1 small zucchini, coarsely chopped 1/2 tsp. dried basil leaves, crushed 1/8 tsp. garlic powder OR 1 clove garlic, minced 1 can Campbell's® Healthy Request® Condensed Tomato Soup, undiluted 1-1/3 cups water 1 tsp. lemon juice 1-1/2 cups cooked rice, cooked without butter or salt 2 TB grated Parmesan cheese Spray a sauce pan with vegetable cooking spray. Heat over medium heat 1 minute. Add zucchini, basil and garlic and sauté until tender crisp. Add soup, water, lemon juice and rice. Heat through. Sprinkle with cheese and serve.
