Garlicky Pine Nut Pasta Salad

I don't measure things - go by feel!

 

Ingredients:

 

EVOO

Minced garlic

Pine Nuts

Broccoli Rabe

Sundried Tomatoes

Parsley

Tri-Color Farfalle (or fave pasta shape)

 

In a small pan, heat oil but keep it from smoking. Add minced

garlic and let heat until it starts to sizzle. Turn down heat to

very low and let simmer for about 20/30 minutes.

 

Steam Broccoli Rabe - leaves and all -- cut into small pieces.

 

Toast pine nuts at 350 degrees until just about brown. Watch them

carefully! It takes about 5 minutes -- don't let them burn.

 

Boil pasta according to directions until al dente.

 

In the meantime, slice sundried tomatoes thinly. Mince parsley.

 

When pasta is boiled, drain and rinse with cold water. Mix all

ingredients (including oil and garlic) in a large bowl. Mix

thoroughly.

 

Grind fresh pepper over the dish and enjoy!!
