Smoky Tofu Pasta with Figs 1 Tbl. olive oil 1 onion, chopped 2 garlic cloves, crushed 1 Tbl. flour 2/3 cup heavy cream 1/3 cup dry white wine 3/4 cup smoked tofu, diced 3 fresh figs, washed and chopped 2 Tbls fresh chopped basil (I used cilantro) 2 cups of Penney, zit, rigatoni or spiral pasta Heat oil in a skillet and add onion and garlic, saute for 5 minutes. Stir in the flour, and cook 1 minute longer, Add cream and wine, then bring to a boil stirring constantly. Add the smoked tofu and basil, then cook over a low-med. heat for 5 minutes. Stir in the figs and cook an additional 2 to 3 minutes. Meanwhile, cook pasta in boiling salted water for 8 to 10 minutes or until al dente. Drain well and spoon into serving dishes.
