I adjusted some of the seasonings to our liking and it is very nice to take to potlucks and picnics. It is great to mix up early in the week and just pick at with lunch or as a snack. I love to put these cucumbers on veggie burgers or in sandwich wraps. Enjoy. Marinated Cucumbers 6 medium cucumbers, thinly sliced [no need to peel] 1 medium red onion, sliced into rings 1/3 cup raw sugar [ aka turbinado] 1/4 cup olive oil 1 tsp. sea salt 1 tsp. dried oregano 1 tsp. garlic powder 1/2 tsp. marjoram 1 tsp. lemon-pepper seasoning 1/2 tsp. ground mustard In a bowl, combine the cucumbers and onion. In a jar with a lid, combine the dressing ingredients and shake well. Pour the dressing over the veggies and toss to combine. Cover and refrigerate for at least 4 hours; you can stir this every so often if you think to do it, but if not no worries, it comes out good anyway. Serve with a slotted spoon. Yield: 12 servings ~ PT ~ No one is perfect.
