Guest guest Posted July 21, 2006 Report Share Posted July 21, 2006 Fig-Date Bread 1 cup chopped dates 1 cup chopped dried figs 1/4 cup room temp butter or margarine 1 1/2 tsps. baking soda 1 cup boiling water 1/2 cup sugar (I use raw) 1/2 cup chopped walnuts 2 large eggs 3/4 cup unbleached flour 3/4 cup whole wheat flour 1/2 tsp. baking powder 1/2 tsp. salt Preheat oven to 350 and lightly grease and flour a 8 inch loaf pan In a med. bowl combine dates, figs, butter and baking soda. Add boiling water, toss and let sit for 15 minutes. Beat sugar, walnuts and eggs into date mixture. In a separate bowl combine both flours, baking powder and salt, mix well, stir into the date mixture until blended. Pour batter into prepared pan. Bake for 50 to 60 minutes until a toothpick inserted comes out clean. Cool for 1o minutes, turn onto wire rack to cool.
