Enjoy, Judy Open Face Brocolli Cheddar " Chicken " Sandwich 1 loaf of WW French Bread or bread of your choice 5 c. Broccoli, chopped fine 1/2 c. Onions, chopped fine Put Broccoli and onions into 1/2 c. boiling water in the bottom of a wok and cover. Cook until just tender crisp. Salt lightly, mix and drain completely. 2/3 c. Mayo or Veganaise 1/4 tsp. garlic salt 1 c. Cheddar Cheese, shredded 1 13 oz. can of Worthington, Fri-Chik, drained well and chopped small. Save and freeze the broth from the Fri-Chik in a zip-lock bag, to put into soup later on. Mix together the Veganaise/Mayo, garlic pwd., cheese and Fri-Chik. Preheat Oven to 400 degrees. Cut the French bread longwise and cut into appromiately 4 lenghts. Put some of the steamed Broccoli/Onion combo on the bread and cover some of the Cheddar Mixture, letting some of the broccoli show. Bake for 5 min. at 400 degree and then broil until nicely browned. Keep a close eye on it when broiling. It took about 5 minutes and I put it on the middle shelf instead of the top rack. Every oven is different so just chech often. I had never heard of Fri-Chik but it sounded interesting, so I did a Google search. I discovered that Amazon's new Grocery section carries some Worthington products. However, you have to buy most things by the case or in a bulk quantity, and they don't have Fri-Chik.
