Think I would use the pan in which the veggies were cooked to warm the flat bread on at least one side which would impart the flavor of the olive oil to the bread. Those flatbreads are thicker than flour tortillas and you kind of need to warm them a bit to soften them up for proper wrapping, IMO. Makes them taste better too as you say they soak up the yum stuff in the pan. It is 9ish here and I need to eat breakfast. I want one of these sandwiches.
