Guest guest Posted July 21, 2006 Report Share Posted July 21, 2006 Sicilian Tomatoes with Mozzarella 1/2-tsp dried basil 1-tsp dried oregano 2-tsp dried parsley 1-19 oz can of stewed tomatoes 1 1/2-cups seasoned croutons 1-cup shredded mozzarella cheese 1-tbsp grated Parmesan cheese Mix most of the basil, oregano, parsley, and stewed tomatoes with half the croutons Pour into a buttered 1-quart casserole dish Sprinkle remaining croutons, basil, oregano, parsley, mozzarella, and Parmesan cheese over top Bake for 20-25 minutes at 375* until cheese is melted and thoroughly warm Makes 4 servings Quote Link to comment Share on other sites More sharing options...

This recipe looks really good to me. I'm going to use the fresh basil, parsley and oregano from the garden on this when I make it. The herbs and okra and peppers are about the only things hanging in there in the garden nowdays. Too hot for anything else. Oh yeah, I'm going to make this in my toaster oven, too!
