Sicilian Tomatoes with Mozzarella

Sicilian Tomatoes with Mozzarella

 

1/2-tsp dried basil

1-tsp dried oregano

2-tsp dried parsley

1-19 oz can of stewed tomatoes

1 1/2-cups seasoned croutons

1-cup shredded mozzarella cheese

1-tbsp grated Parmesan cheese

 

Mix most of the basil, oregano, parsley, and stewed tomatoes with half

the croutons

 

Pour into a buttered 1-quart casserole dish

Sprinkle remaining croutons, basil, oregano, parsley, mozzarella, and

Parmesan cheese over top

 

Bake for 20-25 minutes at 375* until cheese is melted and thoroughly

warm

 

Makes 4 servings

Hi everybody! Havn't posted for awhile and have recently caught up on

a lot of digests from the groups. This recipe looks really good to

me. I'm going to use the fresh basil, parsley and oregano from the

garden on this when I make it. The herbs and okra and peppers are

about the only things hanging in there in the garden nowdays. Too hot

for anything else. Oh yeah, I'm going to make this in my toaster

oven, too!
