Guest guest Posted July 18, 2006 Report Share Posted July 18, 2006 I've had this recipe for months, it just didn't catch my eye and then again it would. I kept thinking it would fall apart. Nope, it turned out of the loaf pan and sliced right down. I made this Sunday, I froze several slices because I wanted to see how it would freeze and reheat. Perfectly! I had it for lunch. Now I served it with mushroom gravy. My Mom had mayo on hers and my ex liked horseradish on his. Mo had some leftover the next day and he loved it covered wit catsup. I made a second loaf and used white beans, just as good as the black bean version. You can really spice this up. CousCous Bean Loaf 2 cups dry couscous re hydrated with 2 cups boiled water 1 lb can black beans, drain and save the liquid 1/2 cup bread crumbs 1 tsp. oregano 1/2 tsp. thyme 1/3 tsp. marjoram 2 cloves of garlic,minced 1 egg, beaten 2 tbls. catsup (I used salsa) Optional-catsup to brush over top, I left it plain I added a dash of cumin and red pepper flakes Preheat oven to 400 degrees and spray a 9X5 -inch loaf pan Prepare couscous by placing in a large mixing bowl and pouring 2 cups boiled water over top, cover with a plate and let sit 10 minutes. After the couscous is ready add the beans, bread crumbs, garlic and herbs, mix well. In a small bowl whisk together egg and catsup and mix into the couscous mixture and blend well. Place mixture into prepared loaf pan and press it down, bake for 30 minutes. Brush top with catsup and bake 5 more minutes. Remove from oven and let sit for 10 minutes. Run a table knife along edges, place a serving plate over loaf pan and turn over, it will pop right out, slice down and serve with your favorite sauce, garnish, gravy, etc. **Note** Some grilled onions would be good in this, so would some minced hot peppers if you like heat. The basic recipe is very good. Is it in case the mixture is too dry after everything is mixed together? As a kid I always liked my mother's meatloaf and so loaf recipes = comfort food for me. Plus, they're easy to freeze & pack for lunch.
