Spiral pasta Sun-dried tomatoes, minced (I used the s-d tom. that are stored in oil and add a bit of the oil to the pasta dish) Extra virgin olive oil (evoo for you Rachel Ray fans), drizzle Mixed cheese chunks (I used a bag that had a mixture of romano, parmesan and feta - or something like that). Cracked pepper Sea salt Simple, clean dish. I really liked this. You can make a big batch and either eat it as your meal or serve it as a side dish to accompany your favorite sandwich or lunch item. I'm sure it can be eaten warmed up but I prefer to stick with the cold pasta dish on these hot days.
