They also have vital gluten (bumps up the gluten formation in yeast raised breads). Oil should work, or melted butter, margarine. You can often score an old Bernard Clayton, Jr. Bread book on eBay. Worth every penny, IMO. If you are into (or get into) pastries, you will want another of his books, The Complete Book of Pastry: Sweet and Savory.
