It was a little bland for my tastes, but I think it would be excellent with some sort of drained bean (black or garbanzo), corn, some minced jalapenos, and chopped cilantro added. I used regular rice instead of Minute rice. I had to cook it about 10 minutes longer than the recipe stated. My hubby ate his in fresh corn tortillas with lots of hot sauce. I got this recipe from Jamie R.'s list: Vegetarian-For-All YELLOW SQUASH AND ZUCCHINI CASSEROLE 2 med. yellow squash 1 med. zucchini squash (both kinds diced) 1 med. onion, chopped 1 c. grated Cheddar cheese 2 tbsp. butter 1 1/2 c. lowfat milk 1 lg. egg, beaten 1 c. Minute rice 1 tsp. Italian seasoning 1/2 tsp. salt 1/2 tsp. black pepper Combine all ingredients in large bowl; mix well. Pour into greased casserole baking dish.
