Guest guest Posted July 12, 2006 Report Share Posted July 12, 2006 I had several zucchini to use up and wanted to make some delicious veggie patties out of them. I found one recipe in our files here that was shared by Connie, and that one is very similar to the one below; they only differ slightly. I followed the recipe below that I got from the veg group files that shared over there by Debbie. Thanks Debbie, these are wonderful. I will add my changes to the recipe in brackets. No Crab Cakes by Debbie Ingredients: 2 cups grated zucchini [i doubled the recipe, so needed 4 cups, but only had 3 and half cups of shredded zucchini, so I made up the difference with shredded carrot] 2 large eggs -- beaten 1 cup fine dry breadcrumbs 3 green onions -- chopped 2 teaspoons Old Bay seasoning 1 teaspoon mayonnaise [i left the mayo out, it didn't need it] [i also added some garlic powder, about 1/4 tsp.] vegetable oil tartar sauce [i used some whole wheat cracker crumbs to coat the patties before frying them in the vegetabe oil.] Directions: Drain zucchini, pressing between layers of paper towels. [i just squeezed the zucch with my hands to get most of the liquid out] Combine zucchini and next 5 ingredients in a bowl. Shape mixture into 8 patties (mixture will be soft). Pour oil to depth of 1/2 inch into a large heavy skillet. Fry patties in hot oil over medium-high heat 2 minutes on each side. Drain on paper towels; serve with tartar sauce. These are so awesome and easy.
