My favorite way to eat collards, kale or chard (other than salads), is to steam them, then use a sesame seed cheese (1 cup raw tahini (sesame seed butter), 1/3 cup lemon juice (pulp ok), 3-5 smooshed cloves of garlic, salt to taste, maybe just a small dab of liquid hickory smoke - all mixed together with a fork) to coat them, add chopped tomatoes and walnuts (omega-3 source), and eat this with a good bread toasted and a stout (not Guinness which is fined with a fish product, but Sam Adams Cream Stout is vegan)....
