The User Guide that comes with the lunchbox is a little under 100 pages. Only about 15 pages are recipes. The bulk of the book deals with garbage waste/environment, nutrition, choosing foods wisely and things like that. There are a bunch of sample menus - not all recipes are in the book, but many don't even require recipes. One sample meal is a quesadilla, green salad & dressing, sliced mango and almonds. I made something from the book the other day, which I'll post here: Banana & Brown Rice Pudding 4 servings 1 medium banana 1/4 cup water 2 Tbsp honey or maple syrup 1 tsp vanilla extract 1/2 tsp cinnamon 2 cups cooked brown rice 1 cup nonfat milk or soymilk (but I'm sure rice/almond milk would also work) In a medium saucepan, combine the banana, honey or syrup, water vanilla & cinnamon. Bring the mixture to a boil and stir. Reduce heat and simmer for 5 minutes or until soft but not mushy. Add the rice and milk and mix well. Bring back to a boil, and simmer for 10 minutes, stirring occasionally. I only had one cup of cooked rice so I halved everything but forgot to use less banana. I had about 3 oz of banana to half of the other ingredients. It was quite sweet, but good. I could have easily left out the 1 Tbsp of honey I used. You could also add any dried fruit and/or nuts; or use a different fresh fruit instead of banana. -- Liz
