Guest guest Posted July 10, 2006 Report Share Posted July 10, 2006 Here is a great pie crust recipe for a quiche or any other dinner type of pie filled with veggies. I added some garlic powder to mine which isn't in the original recipe I followed from The Enchanted Broccoli Forest cookbook. I just love that cookbook since it was one of the first I ever owned as a vegetarian. In some ways I feel like Mollie taught me how to cook. Mashed Potato Crust 2 large potatoes 2 Tbs. butter 1/4 tsp. sea salt 1/4 tsp. garlic powder 1/4 tsp. ground black pepper 1/2 cup finely-minced onion Some olive oil, for brushing Scrub potatoes and cut into chunks. Boil until tender, then drain. Mash with the butter salt, garlic powder and pepper. Stir in the onion and then spoon into a buttered 9 inch pie pan. Using a fork or spoon smooth the potato mixture around to make an even crust. Bake at 375? for about 45 minutes. Half way through the baking, brush the crust with some olive oil. This makes a great crust for a quiche!
