The main thing that I keep the same each time is the strawberries and the balsamic dressing. I served it at our family 4th of July get-together, and my brother commented on how good it was later and liked the " bacon " in it. He had to be convinced that there was no bacon---it was the toasted almonds that gave that impression. Hope this doesn't keep anyone from trying it! LOL. This is a whole lunch for me. Paula All ingredient quantities are approximate--adjust to your own taste Spinach and Strawberry Salad 12 oz baby spinach leaves 1/2 of large head of red romaine or other leafy lettuce of your choice 1 small mild onion very thinly sliced 1 large avocado, cut into bite size pieces and sprinkled with lime juice 1 lb strawberries, sliced lengthwise into 1/4ths or 1/8ths - depending on size of strawberry 1 can mandarin oranges, drained....OR grapefruit segments Toasted slivered almonds--enough to sprinkle about 2 Tbsp on each serving of salad Balsamic vinaigrette style salad dressing Cut or tear spinach and lettuce into desired size, add sliced onion and mix. Then divide into salad bowls. Top each bowl with the avocado, strawberries, and oranges or grapefruit, and drizzle about 2 Tbsp dressing per bowl. For some reason the balsamic vinegar really brings out the flavor of the strawberries. I haven't make one yet this summer so thanks for the reminder.
