Some breakfast suggestions that my kids would (and still do though the baby is 32. Peanut butter on toasted bagel or toast: add sliced apples to the top or possibly a mixture of grated carrots, raisins, tiny bit of yogurt to bind Breakfast Rice 1 cup brown rice 1 cup apple juice 1 cup water 1/2 cup raisins 1/2 teaspoon ground cinamon Combine in saucepan, cook 40 minutes on low or till soft. Let sit for 10 minutes before serving. Or cook in rice cooker. Or cook in crockpot overnight. Stores easily in refrigerator or freezer, pull out servings and nuke. I like a spoonful of vanilla yogurt on top. Muffin Pizzas Grated mozzarella cheese Grated Parmesan cheese, if they like it Veggies they will eat (cooked mushrooms, sweet peppers, cooked onions) Pizza sauce English muffins (or bagels) Mix together, adding as much sauce as you need to bind. You want it thick and cheesy, not runny. This will keep in the fridge a week. To make pizzas, open muffin, top genrously with cheese mixture. Bake at 375 F till cheese melts. I didn't put down amounts because for 7 kids I usually used 5 pounds of Mozzarella. It lasted most of a week and they had other things they could add, such as meats for the carnivores and black olives for two others. Quiche (millions of recipes online)...these freeze easily, use individual pie tins. Protein Bars 1 cup Natural peanut butter 8 tablespoons honey 1 & 1/4 cups whey protein powder (I use Champion Stack vanilla, banana, or chocolate) 1 cup of uncooked oatmeal Mix the peanut butter and honey in a bowl, microwave on full for 80 secs. Add the rest and mix together (use your hands) Can add raisins/nuts etc to taste. Smooth into 13x9 tray and let stand for 20 mins. Cut into 10 to 12 equal bars and wrap and store in fridge. No Bake Protein Bars 1 cup rolled oats 1/2 cup wheat germ 1/2 cup oat bran 1/2 cup vanilla protein powder 1 cup crunchy peanut butter 1 cup raisins or other minced dried fruit 1 cup chocolate or carob chips 1 cup honey Mix together. Pat out onto waxed paper or into a baking pan. Cut into rectangles. Wrap or put in zipper bags, freeze till needed. As a great source of protein dried fruits like apricots, pineapple, apples, banana chips, cranberries, raisins, figs, blueberries really add to the flavor. For some interesting crunch value add sesame, pumpkin, poppy, caraway, sunflower seeds, as well as other organic food items Hope this helps, Jeanne in Georgia Get on board.
